Move Go module path to production Forgejo instance.
Updates all imports, go.mod, go.sum, docs, and CI configs.

Address code review findings:
- Add global wrappers: StartWithOptions, RunWithOptions, Running
- Add global_test.go with concurrent access tests for Default(),
SetDefault(), and concurrent operations
- Add process_test.go with dedicated Process struct method tests
- All tests pass with race detector
